A favorite around our house- bean tacos. Empty 2 can of beans into a saucepan. (we use pinto/black with juice) Chop some green onions and cilantro up and sprinkle in the beans like fairy dust (bbbbrrrrruuuuunnnnn!) Let that simmer for like 20 minutes to thicken a bit. Mash them a little bit with a fork but not all of them. Warm some corn tortillas in a pan with spritzed with some non-cook spray. Use the beans as your "meat" in the taco. Top with normal toppings for tacos such as lettuce, cheese, salsa, more cilantro...anything mexican. Mmmmmmm....
